Thanksgiving Menus at Company American Bistro and Wolfgang Puck Restaurants
In town next week and want to celebrate Thanksgiving at a great restaurant? Well several fine dining establishments on The Strip have put together special menus especially for the holiday.
Both Company American Bistro at the Luxor (which is owned by Pure Management Group) and the Wolfgang Puck Fine Dining Group were kind enough to send over copies of the Thanksgiving menus they will have to offer diners on Thursday, November 27, 2008 and I have to say they sound yummy.

Company American Bistro at The Luxor
- Choice of entree: slow cooked turkey roulade with shiitake mushrooms, figs and cranberries; pan-roasted North Atlantic cod with a chestnut crust, brussel sprouts and a citrus buerre blanc (a wine-butter sauce); or butter-sauteed petite filet of beef with melted leeks
- With choice of sides: yukon gold mashed potatoes, green beans with bacon and butternut squash
- Dessert: apple tarte tatin (an upside down tart).
Price: $17 per person

Cut at The Palazzo
Puck’s newest steakhouse will offer a pre-fixe tasting menu with the following items:
- Amuse-bouche – Celery root soup with roasted quince and cranberry compote
- The Salad – Organic Fuji apple salad with fennel, red endive, Medjool dates and Marcona almonds
- The Bird – Bourbon red, natural-raised heritage turkey by Four Story Hill Farms
- For The Table – Red jewel sweet potato puree, Brussels sprouts and confit bacon, Sourdough stuffing with wild mushrooms and sweet onions
- The Sauces – Cranberry chutney, Turkey gravy
- The Sweet Pumpkin Tasting – Pumpkin cheesecake with a ginger spice cookie crust, Spiced pumpkin pot de crème with maple whipped cream, Apple vanilla stuffed pumpkin donuts with toasted pumpkin seeds and Moravian “cookies & cream” ice cream

Postrio at The Venetian
Mixing contemporary California cuisine with a Mediterranean flair, this Wolfgang Puck restaurant will offer the following Thanksgiving tasting menu:
- First Course (choice of): mixed baby lettuce salad with Bosc pears, goat cheese fondue and pine nuts or puree of pumpkin soup with toasted pumpkin seeds and coriander scented crème fraiche
- Entrée (choice of): roasted free-range turkey breast with brioche stuffing, haricot verts, cranberry compote and herb gravy or braised beef short rib with Hanson Mills polenta, braised greens and Madeira jus
- Dessert: pumpkin pie with cinnamon ice cream and nutmeg whipped cream
Price: $39 per person (note, the turkey breast entree is also available a la carte for $29)

Wolfgang Puck Bar & Grill at MGM Grand
Puck’s more casual eatery will offer an a la carte Thanksgiving menu consisting of:
- Wild arugula salad with citrus vinaigrette, dried cranberries, toasted almonds and aged pecorino for $14
- Oven roasted free-range turkey breast with braised leg, Oregon chanterelle stuffing, Yukon potato puree, honeyed yams, buttered green beans, orange-cranberry relish and herbed turkey jus for $28
- Pumpkin cheesecake with gingerbread crust, cranberry compote and nutmeg whipped cream for $8

This Wolfgang Puck restaurant will offer a pre-fixe tasting menu with the following items:
- Spiced butternut squash soup with cardamom cream, served with cranberry goat cheese panini
- Roasted free-range turkey roulade featuring pretzel bread stuffing knödel, green bean casserole, sweet potato puree with brown sugar, yellowfin mash potato, fresh cranberry-apple chutney and clove turkey natural jus
- Triple Silken Pumpkin Pie

Trattoria del Lupo at Mandalay Bay
Puck’s Italian restaurant will offer the following a la carte Thanksgiving menu in addition to its regular menu:
- Butternut squash soup made with apple and golden raisin compote, cranberry sauce and pumpkin seed oil for $11
- Honey glazed turkey breast with mashed potatoes, green beans, cranberry relish and herb gravy for $29
- Grilled pork chop and braised belly with apple-fennel marmalade and sage for $36
